Fork's pastry chef is named one of 5 best newcomers in U.S.

Today, Food & Wine mag announced that Sam Kincaid was named one of the 2014 Best New Pastry Chefs in America. Under F&W's standards, all have run a restaurant pastry department for five years or less.

These are happy tines for Fork in Old City.

She joined Fork in early 2013

Kincaid joins Jared Bacheller of L'Espalier Boston, Greg Mosko of North Pond in Chicago, Sarah Rich of Rich Table in San Francisco, and Jennifer Yee of Lafayette in New York.

The accompanying story in December's F&W says Kincaid is inspired by what she calls "the cadence of a growing season," creating complex desserts that combine disparate flavors. "I 'write' and 'rewrite' every dessert each time I return to it," says Kincaid, 29, a Wisconsin farm girl whose husband is a.kitchen chef de cuisine Jon Nodler.

The national mags have been generous to Fork and the rest of Ellen Yin's empire (High Street Hospitality): High Street on Market next door, and a.kitchen and a.bar on Rittenhouse Square.

Over the summer, F&W named chef Eli Kulp as a best new chef, and Bon Appetit named High Street on Market the #2 new restaurant in America, singling out baker Alex Bois.

Also, High Street Hospitality just obtained the services of former Vernick bar manager Vincent Stipo, who will help to reinvent a.bar. In May, Stipo was named one of America's 25 best bartenders by The Daily Meal.
